SWEET & SPICY SUMMER SALAD
Who said salad needs to be boring?
Try this fresh, sweet & spicy summer salad to fill your plate with a good balance of fruit, veggies, protein & healthy fats.

BASE GREENS: Mixed salad leaves
COLOURFUL VEGGIES: diced butternut squash and/or sweet potato
FRUIT: Strawberries
PROTEIN: Chicken breast
SEASONING: Piri piri
HEALTHY FATS / FOR SPRINKLING: Feta
HEALTHY FATS / FOR A BIT OF CRUNCH: Walnuts
VEGGIE? Take out the chicken or substitute with tofu/tempeh
VEGAN? as above & take out the feta or substitute with a vegan cheese alternative

Lay butternut squash/sweet potato on a baking trAy and spray with oil (or drizzle with olive oil but make sure you track it if counting calories!)
Season chicken breast and place on a baking TRAY
Cook veggies in oven at 180 degrees for 25-35mins
Cook chicken in oven at 180 degrees for 15-20mins
Meanwhile prepare salad:
wash & chop strawberries (and veggies if you haven’t bought pre-diced)
Place a couple of handfuls of salad leaves in a large shallow bowl
Add veggies & fruit
Once chicken is cooked, slice up and place over salad
Top with a sprinkling of feta and walnuts

For 500kcals/35g protein

200g butternut squash & sweet potato mix
50g strawberries
