SWEET & SPICY SUMMER SALAD

Who said salad needs to be boring?

Try this fresh, sweet & spicy summer salad to fill your plate with a good balance of fruit, veggies, protein & healthy fats.

  • BASE GREENS: Mixed salad leaves

    COLOURFUL VEGGIES: diced butternut squash and/or sweet potato

    FRUIT: Strawberries

    PROTEIN: Chicken breast

    SEASONING: Piri piri

    HEALTHY FATS / FOR SPRINKLING: Feta

    HEALTHY FATS / FOR A BIT OF CRUNCH: Walnuts

    VEGGIE? Take out the chicken or substitute with tofu/tempeh

    VEGAN? as above & take out the feta or substitute with a vegan cheese alternative

    1. Lay butternut squash/sweet potato on a baking trAy and spray with oil (or drizzle with olive oil but make sure you track it if counting calories!)

    2. Season chicken breast and place on a baking TRAY

    3. Cook veggies in oven at 180 degrees for 25-35mins

    4. Cook chicken in oven at 180 degrees for 15-20mins

    5. Meanwhile prepare salad:

      wash & chop strawberries (and veggies if you haven’t bought pre-diced)

      Place a couple of handfuls of salad leaves in a large shallow bowl

      Add veggies & fruit

    6. Once chicken is cooked, slice up and place over salad

    7. Top with a sprinkling of feta and walnuts

  • For 400kcals/50g protein

    As many leaves as you like

    15g feta

    15g walnuts

    For 500kcals/50g protein

    As many leaves as you like

    200g butternut squash & sweet potato mix

    100g strawberries

    200g chicken

    20g feta

    15g walnuts

    (VEGGIE/VEGAN)

    For 400kcals/35g protein

    AS MANY LEAVES AS YOU LIKE

    150g butternut squash

    50g strawberries

    150g tempeh

    5g walnuts

    For 500kcals/35g protein

    AS MANY LEAVES AS YOU LIKE

    200g butternut squash & sweet potato mix

    50g strawberries

    150g tempeh

    15g walnuts
