INCORPORATING QUALITY CARBOHYDRATES

This recipe is a great way to incorporate quality carbs such as sweet potatoes and pack out meals with lots of colourful veggies.

This can be cooked as a big batch on a Sunday night to have with your meals throughout the week

MISO ROASTED VEGETABLES & SWEET POTATO

Ingredients


  • Sweet potatoes

  • Courgettes

  • Peppers

  • Red onions

  • Olive oil

  • White miso paste

  • Salt

  • Pepper

 

 

Method


  1. Pre-heat oven to 220 degrees

  2. Slice sweet potatoes into discs

  3. Chop veg into chunks

  4. In a large bowl mix together miso paste (if making up a big batch I just use half a jar), a tablespoon of olive oil, salt & pepper

  5. Toss all the sweet potato & veg into the bowl and mix to cover with the miso mix

  6. Place potatoes & veg on a baking try and cook for 20-25 minutes

 

Good pairings to eat this with…


  • These go great with a piece of salmon baked with a squeeze of lemon and sprinkling of pepper to get a good hit of protein & healthy fats

  • Dont like fish? Also goes great with a cooked chicken breast

  • Veggie? Throw in some tofu pieces to the mix
