Turkey Pilaf

Ingredients (~4 servings)


  • 2 tbsp olive oil/ rapeseed oil

  • 1 onion

  • 1 leek

  • 2 garlic cloves

  • 400g turkey breast steaks (sliced in 1cm strips)

  • 2 tbsp curry paste

  • 200g brown basmati rice

  • 500ml chicken stock

  • 300g broccoli

  • 100g frozen peas

  • Handful of fresh parsley

  • Plain greek yoghurt (optional)

 

Method


  1. Heat oil in a heavy-based pan over medium heat

  2. Add chopped onion and leek and cook for 5 minutes

  3. Add garlic and turkey breast and cook for 2-3 minutes

  4. Stir in curry paste, rice and stock and bring to boil

  5. Cover and cook on low heat for 25 minutes or until rice has absorbed most of the liquid

  6. Stir in broccoli and continue to cook for 5 minutes

  7. Add peas and continue to cook for 5 minutes (adding a little more stock/water if necessary)

  8. Stir in parsley, season to taste and serve topped with a spoonful of plain greek yoghurt
