Bolognese Ragu

Ingredients (~6 servings)


  • 1 Red onion

  • 2 Garlic gloves

  • 2 Carrots

  • 2 celery sticks

  • Large pack of 5% lean minced beef

  • Chopped Pancetta

  • 3 tbsp tomato paste

  • 3 cups beef stock

  • Glass of red wine

  • Glass of milk

  • Tagliatelle

  • Parmesan

  • Black pepper

 

Method


  1. Add olive oil to pan and allow to heat

  2. Add onions, carrot & celery and cook for 8 minutes

  3. Add garlic and stir for 1 minute

  4. Add mince & pancetta and brown for 15 minutes

  5. Add red wine and cook for 1 minute

  6. Add tomato paste & stock and simmer for 1 hour

  7. In a separate pan heat milk and slowly add to bolognese

  8. Simmer for a further 45 minutes

  9. Once ready to eat, cook tagliatelle, mix in some bolognese and top with parmesan & black pepper
