CURRIED CHICKPEAS WITH SOFT BOILED EGG

With this recipe you get a balanced and tasty meals that can be prepped or part prepped in advanced or cooked fresh in 10 minutes

SMART CARBS/PROTEIN: 350g chickpeas
PROTEIN BOOST: 2 Eggs
GREENS: Handful of spinach
FATS: 1 tsp olive oil or coconut oil (to cook with)
FLAVOUR: Cumin, Coriander, Tandoori masala, garlic

Add water to a pan and heat until boiling
Add eggs and cook for 7-9 minutes (dependant on how runny you like your eggs)
Meanwhile, combine spices & chickpeas in a bowl
Heat oil to frying pan then add chickpeas and fry off until cooked through (should only take a couple of minutes)
Once cooked, mixed through a handful of spinach (you can either cook for a few more minute until it is wilted down or transfer straight to a bowl
Top with the 2 boiled eggs and enjoy!
