This recipe is packed with protein and full of flavour.
Creamy Chipotle Pasta Bowl
Ingredients (1 serving)
Choose your PROTEIN:
150g Cooked chicken
Flaked salmon fillet
100g Smoked salmon
Packet of Cooked prawns
Eat your VEGGIES:
50g peas
Handful of spinach
30g sun-blushed tomatoes
Choose 50g (dry) of your favourite SMART CARB:
Wholegrain pasta
Pea pasta
Chickpea pasta
Beetroot pasta
Your SAUCE:
50g 0% fat greek yoghurt
1 tsp chipotle paste
Method
Add pasta and peas to a pan of boiling water and cook for 10 minutes
Meanwhile, mix together greek yoghurt & chipotle paste in a large bowl.
Add spinach and tomatoes to bowl and mix chipotle yoghurt to cover
Add your protein and mix
Once the pasta/peas are cooked, drain and add to bowl (if you have thick yoghurt you may wish to use a tiny bit of the pasta water too!
Mix thoroughly and enjoy!
