Creamy Chipotle Pasta Bowl

Ingredients (1 serving)


  • Choose your PROTEIN:

    • 150g Cooked chicken

    • Flaked salmon fillet

    • 100g Smoked salmon

    • Packet of Cooked prawns

  • Eat your VEGGIES:

    • 50g peas

    • Handful of spinach

    • 30g sun-blushed tomatoes

  • Choose 50g (dry) of your favourite SMART CARB:

    • Wholegrain pasta

    • Pea pasta

    • Chickpea pasta

    • Beetroot pasta

  • Your SAUCE:

    • 50g 0% fat greek yoghurt

    • 1 tsp chipotle paste

 

Method


  1. Add pasta and peas to a pan of boiling water and cook for 10 minutes

  2. Meanwhile, mix together greek yoghurt & chipotle paste in a large bowl.

  3. Add spinach and tomatoes to bowl and mix chipotle yoghurt to cover

  4. Add your protein and mix

  5. Once the pasta/peas are cooked, drain and add to bowl (if you have thick yoghurt you may wish to use a tiny bit of the pasta water too!

  6. Mix thoroughly and enjoy!
