BREAKFAST IDEAS

Fed up of porridge or overnight oats for breakfast and fancy something a bit different?

This is a nutrious savoury breakfast with a kick of spice and sweetness thrown in.

SAVOURY BREAKFAST BOWL

Ingredients


  • Eggs

  • Avocado

  • Brocolli

  • Sweet potatoes

  • Olive oil

  • Chilli flakes

  • Roasted black sesame seeds

  • Sriracha sauce

 

Creating your plate


Aim for 1-2 portions of the following:

1 Portion of PROTEIN = 2 soft boiled eggs peeled and sliced in half

1 Portion of QUALITY CARBS = 1 Cupped handful of roasted sweet potatoes

1 Portion of NON-STARCHY VEGGIES = 1 Fist of brocolli

1 Portion of HEALTHY FATS = 1/3 of an avocado sliced

Finish off with a drizzle of sriracha sauce and sprinkling of roasted sesame seeds goes down a treat!

 

Meal prep


BATCH PREP TASK 1 - Protein

Soft boil some eggies

  • Boil water in a kettle

  • Add water & eggs to a pan and cook for 7-8 minutes

  • Keep in shell until ready to eat

[Vegan? Replace eggs with paprika roasted chickpeas or tofu]

BATCH PREP TASK 2 - Quality carbs

Roast sweet potatoes

  • Chop sweet potates into cubes and place on a baking tray

  • Drizzle a tablespoon of olive oil and a pinch of salt & pepper over the sweet potatoes and mix around to cover

  • Cook in the oven at 220 degrees for 20-25 minutes

BATCH PREP TASK 3 - Non-starchy veggies

Steam your greens

  • Steam (or you can pan fry) some longstem brocolli and toss through chilli flakes, salt & pepper
